Brewer

PRIMARY FUNCTION

 

The Brewer is a valued position within the company. He or she must be attentive and intuitive in addition to working directly under the Assistant Brewer to manage all day to day production tasks in and for the brewery.

 

SPECIFIC DUTIES & RESPONSIBILITIES

 

PRODUCTION

 

Key Responsibilities will include but are not limited to:

Day To Day Tasks

Starts the double brew on double brew days

High Gravity brews on weekends

Daily Fermenter and BBT Checks

Fermenter CIP’s

Maintains healthy yeast and to plan fermentations with Assistant Brewer

Yeast cell counts and reports up any viability concerns

Organises library and provides feedback on quality issues

Q/A – carrying out Food Safety Audit making sure all records are compliant

Stocktaking of PLNT items (raw materials)

Troubleshooting Repairs and Maintenance with Assistant Brewer and Head Brewer

Dry Hopping and Centrifuge Runs

 

 

Wort Production:

Milling (handle 25kg grain bags) recording all batch numbers on brewsheets.

Mashing/Lautering

Boiling wort and accurately adding bittering hops

Graining out

Knocking out at specified temperatures

Brewhouse CIP

Accurately and precisely follows recipes

Keep accurate records on brewsheets

Cellar Operations:

Yeast management

Filtration/fining

Carbonating

CIP for bright tanks and fermenters per brewery procedures

Maintains a spotless brewery

Keeps brewery equipment organised

Keg cleaning

Packaging beer (canning/bottling/kegging)

Organising and keeping a tidy inventory of all raw ingredients

Record Keeping:

Keeps accurate cellar report

Discusses any and all brewery issues with the Head Brewer

 

 

R&D

Beer testing & evaluation (visual and taste) regarding colour, body, flavour and aroma; understanding, identifying and dealing with faulty beer as soon as possible in the brewing/packaging process

Develop practical adjustments and processes deriving from sensory and scientific testing

Manage yeast health. This includes scientific laboratory work as well as the physical handling of the brewery’s yeast cultures

Work with microscopes, pH meters, density meters, dissolved oxygen meters and any other scientific equipment as needed

QA Monitoring – and control / testing of – fermentation, including pH measurements, gravity readings, yeast counting, and further microbial testing in the laboratory

 

 

GENERAL

Be an ambassador for Behemoth Brewing Company at all times (on and off duty), ensuring service is professional both in behaviour and appearance.

Be courteous to other suppliers, remembering that it is a small community.

Ensure any feedback obtained from customers is returned to the Employer for follow up.

Ensure compliance with Behemoth Company policies and standards at all times (e.g. timekeeping, professionalism, customer service).

Work well under pressure, with the ability to deliver on deadline.

Assist Behemoth Management with ad hoc duties required.
